Recipes

1. Quebec Apple Dumplings
   Ingredients:
   1 Pie dough (double batch)
   1/4 c Cheddar cheese-grated
   12 Apples; medium- peeled & cored
   1/2 c Mincement
   1/4 c Rum
   Butter
   3/4 c Sugar
   1/4 c Sugar; Brown
   1/4 c Cream
   Lemon rind; 1/2 lemon
   
   
   Instructions:
   Preheat oven to 400F.
   Make enough pie enough to roll into 12 6"x6" squares (about a double batch.
   Sprinkle each square with 1 tsp grated cheddar.
   Peel and core apples and place one on each square.
   Fill the centre of each apple with 2 tsp (or 1 heaping tsp) of mincement, 1 tsp of rum, a dot of butter and 1 Tablespoon sugar.
   Bring diagonally opposite corners of dough over the apple to form ears at the top.
   Cover the 'ears' with aluminium foil.
   Mix the brown sugar, cream and grated lemon rind.
   Brush the dumplings with this mixture and bake 35 to 45 minutes in 400F oven.
   Remove foil, brush ears with cream mixture and return to oven till 'ears' are brown.
   Serve warm to plain cream or sweetened cream, flavoured with rum.
   Note from Anne MacLellan: Mme Benoit does not give total amounts for cheese, sugar, mincement and rum.
   I used Meal Master's conversion to decimal and back to calculate the total amounts.
   
   To quote Mme. Benoit,"In Quebec these were baked in deep brown earthenware pudding dishes and served on a hot wooden board or tray surrounded by autumn leaves or boughs cut from the Christmas tree. It was a traditional in our family to serve these dumplings after we had finished decorating the Christmas tree."
   
   
2. Raisin Bread For Bread Machine
   
   Ingredients:
   --------- REGULAR LOAF ---------
   3/4 c Water
   2 c White bread flour
   1 tb Dry milk
   1 tb Sugar
   1 ts Salt
   1 tb Butter
   1/2 ts Cinnamon
   1/2 c Raisins
   1 1/2 ts Fast rise yeast **OR**
   2 ts Active dry yeast
   
   --------- LARGE LOAF ---------
   1 1/4 c Water
   3 c White bread flour
   2 tb Dry milk
   1 1/2 tb Sugar
   1 1/2 ts Salt
   2 tb Butter
   1 ts Cinnamon
   1 c Raisins
   2 ts Fast rise yeast **OR**
   3 ts Active dry yeast
   
   Instructions:
   +++servings are 8 for regular loaf, 12 for large loaf.
   
   HINTS: For whole raisins in the bread, add the fruit at the beep on the fruit and nut cycle, or after the first knead.
   If using rapid bake cycle, add raisins with other ingredients.
   Be sure to follow loading instructions for your particular bread machine.
   This recipe can be used with the regular, rapid, or delayed time bake cycles.

3. Ready Hamburger Mix
   
   Ingredients:
   4 lb Lean Ground Beef
   2 ts Salt
   1/2 ts Oregano
   1 Large Onion, Chopped
   1/2 ts Pepper
   1/4 ts Garlic Salt
   
   Instructions:
   Brown Ground Beef in a heavy skillet.
   Add onion and continue cooking over medium heat until onions are golden.
   Add remaining ingredients.
   Cool; spoon mixture into four 1-pint containers, leaving 1/2-inch space at top.
   Label as READY HAMBURGER MIX and freeze.
   Use within 3 months.
   Makes about 4 pints of READY HAMBURGER MIX.

Introducing a New Pet

It is easier to get two young animals to live in harmony as they will grow up together, however with a bit of time and patience (it may take up to 6-7 weeks) a young kitten or puppy can be introduced to an older pet.

Your old pet should be exposed to as many new situations, visitors and pets as possible. This will help them to adapt to any new pets in the house.

If you are getting your new pet from a shelter then you should ask the staff about its behaviour towards other animals; does it have a history of aggression toward other animals?

When your new pet arrives it will be very tempting to spend a great deal of time with it, perhaps at the expense of your old pet. You should lavish praise and attention on your old pet to avoid any jealousy issues, which can occur. When you are dealing with a puppy and an adult dog, you should resist the temptation to be overprotective of the young dog. If the adult reprimands the puppy try not to interfere, this will upset the normal household hierarchy and may lead the older animal to use excess force in the future.

You should allow the old pet to eat and sleep where it always has so there are no territorial problems. The new pet should be given it's own area.

It is best to keep the new pet in a room on it's own for the first couple of weeks (preferably with a wipe clean floor in case of accidents). This will allow the old pet to sniff around the door and get used to the idea that there is something else in the house.

You should not feed the two pets together ( you may be able to do this in time) as this can evoke fighting over food; they should also have their own dishes. In a multi-cat household they should each have their own litter tray.

After a couple of weeks you can try swapping the situations over. Let the new pet roam the house for a couple of hours a day and put the old pet in the isolated room, this will allow them both to get used to each other's smell. This stage may take weeks.

Next, you are ready to let the pets see each other. Either you can use a technique such as a baby gate (although if you are introducing cats or large dogs they may leap over this) or you can try putting the new pet into a carrier cage and let the old pet sniff around it (you should never leave the pets unattended like this). Alternatively, if there are two of you, one person can hold the old pet and one can hold the new pet.

Once you are happy with the last stage the two pets can be allowed free to interact with each other. If the animals begin to fight this can indicate that the introduction is proceeding too quickly and you should go back a stage before trying again. If a fight occurs, the animals should be left to fully relax again before further contact between them is attempted.

Never leave your pets alone together until you are confident that they will not fight in your absence.

Caring For Your Aging Parent - How To Walk A Mile In Their Shoes

Caregiving is one of the most demanding roles anyone can undertake. If you are performing as caregiver now or you know you will be in the near future, there are some techniques you may find useful.

Whether you are caregiver to an aging parent, spouse, sibling or any loved one, many emotions will be the same.

Frustration and anger will rear up its ugly persona. Even if you think you are as good-natured as they come, think again. This is natural.

Don't let the guilt of these emotions overwhelm you when they happen. Just keep saying over and over, "I'm not a bad person. This is normal. I'll get through it."

My mother depended on me for many years. She was caregiver to my father for many years so I got to see first hand what I would be doing in the future.

At first it was more psychological dependence. In the last year of her life, she was like my little child.

Mom resided with me for more years than I care to admit. Maybe I've actually forgotten. As you may know, living with someone is a whole lot different than caregiving at a distance.

Add to that the mother-daughter dynamics and you are sitting on the proverbial powder keg at times.

We went from me getting her fixed up to go out when she was mobile to informing her the time had come for the adult diapers.

Emotions ranged from envy. (She looked better than me when out socializing! Heck, there wasn't time left over for me to primp.)

To anger. At her. At myself. At life. Then back to sadness and depression. For the both of us.

In the final years, I'd finally figured it out. Duh! Whatever negative emotion I was feeling, I'd take a deep breath. Yes, it really does work.

Then I would look at my mother objectively. I'd remember the pictures of her taken as a child and young woman. And, I'd simply put myself in her shoes.

This woman once skipped across the hayfield. Played with her siblings. Giggled at silly things.

She grew up. Married. Was a dedicated wife. Adopted me. And put up with my teenage years. Sure, we had problems. I've never known a family without dysfunction.

Then I'd look at this little old lady and see her soul. Her aged body turned against her but her soul was still that of the newborn baby brought into this world where she endured many difficult years.

I know it's hard. There are times you think your aging parent will send you off the deep end. But, stop and remember them. The way they were.

They did not want this. My Mom used to say, "Oh, to be 70 again!" When I would cringe when "wiping her bottom", I'd remember the hard-working, energetic woman who always took care of others.

Try that experiment when your emotions are doing you in. I know it's easy for me to say. Now. Mom died last year.

And I miss her terribly. I want to hug her again.

Go hug your aging parent. And remember the good times...
