Retailers Spread the Word with Environmentally Friendly Products

Supermarkets and other retailers are jumping on board the environmental consciousness train, promoting more and more of their products as environmentally friendly; meanwhile, mainstream food manufacturers are opting in to the organic food trend.

From Welch's grape juice to organic lettuce in the produce bins, food retailers are getting the message that natural is in. Natural snacks are being advertised on national TV as being available in supermarkets, and entire sections of these giant markets are being devoted to food and cleaning products formerly found only in natural foods stores.

Retailers increase the bottom line by promoting recyclable tote bags.

One practice welcomed by environmentally conscious consumers is the selling of reusable tote bags of natural canvas, designed to replace the "paper or plastic" alternatives available at most grocery checkout counters. For a reasonable price, customers can purchase the requisite number of canvas totes to package their groceries and then reuse the bags on future trips to the store, doing their bit to save the environment and saving the retailers a few pennies on every transaction in the process. Savvy retailers often order the canvas totes with their store logo and street address on the bags, a way to market their business and engender customer loyalty while positioning themselves as environmentally friendly. Additional products, such as mini tote lunch bags and backpacks, provide another income stream. For real purists, these bags are often available made of organic cotton canvas.

Closing the circle: promoting products made from recycled materials.

All the recycling campaigns in the world aren't worth anything if consumers don't buy products made from the collected recyclables. Luckily, more and more products are available using materials manufactured from paper, plastic, and other collected waste materials. From toilet tissue and paper towels made from recycled paper to numerous products created from waste plastic, an increasing number of consumer goods are available that complete the cycle. One interesting development is the creation of artificial fabrics made from discarded soda bottles. Ecospun® fiber ends up being used in everything from tote bags and backpacks to sturdy, weather-resistant outerwear.

Forty years ago, collection of waste materials for recycling was a novelty, a practice pushed by environmental purists, and a lot of pundits wrote it off at that time as a fad. Now it's standard practice in nearly every community in the country. Now organic foods, chemical-free cleansers, and the purchase of durable goods made from recycled materials are entering the mainstream in a big way, coming out of the esoteric closet of natural food stores New Age shops and into major supermarket chains and clothing retailers. It remains to be seen whether this trend is a fad, or an enduring practice as more and more people become aware of the benefits of recycling.

Salads with Whole Grains and Fruit By Gabe Mirkin, M.D. Cooked wild rice, barley, brown rice or other whole grains make wonderful salads when combined with fruits, vegetables and seasonings. Here are four recipes to get you started. Experiment with your own combinations and favorite flavors; it's hard to go wrong! Wild Rice Fruit Salad 2 cups cooked wild rice 1/2 cup golden raisins 1/2 cup green pepper, chopped 1 cup seedless grapes 1 bunch green onions, sliced 1/4 cup chopped Italian parsley 2 T. lemon juice 1 t. curry powder 1/2 cup no-fat mayonnaise, or enough to moisten grains Combine all ingredients and chill. 4 servings Cuban Mango Salad 1 small sweet onion, chopped 2 mangoes, peeled and chopped 1 16-ounce can black beans, drained and rinsed 2 cups cooked, chilled brown rice or barley 1/2 cup chopped cilantro or Italian parsley 1/4 cup rice vinegar 1 teaspoon ground cumin Bottled hot pepper sauce to taste Combine all ingredients and chill. 4-6 servings Fruity-Nutty Salad 2 oranges or 6 tangerines, peeled and cut in bite-size pieces 2 tart apples, cored and cut in chunks 1 bell pepper, chopped 1 stalk celery, chopped 1 bunch green onions, sliced (white part) 1/2 cup chopped dried apricots 2 cups cooked, chilled wild rice juice of 1 lemon 1/2 teaspoon cinnamon 1/2 cup fat-free mayonnaise 1/2 cup cashews, chopped Combine all ingredients. If making ahead, leave out the mayonnaise and nuts. Chill, then stir in the mayonnaise and the nuts just before serving. 4-6 servings Cranberry-Wild Rice Salad 1 cup dried cranberries 4 cups cooked wild rice, chilled 1/4 cup finely chopped sweet onion 1 6-ounce can water chestnuts, drained and chopped 1 cup crushed pineapple, drained 1/2 cup chopped flat parsley 1/2 cup rice vinegar, or to taste 1/2 cup slivered almonds or other nuts of your choice Combine all ingredients. They're wonderful served over whole grains instead of white rice or pasta. Here are some of my favorites to get you started. High concentrations of mercury and other toxins have raised concerns about the safety of some seafoods, but this appears to be a turf battle between various fishing interests more than an actual health threat. I believe that the benefits of seafood far outweigh the potential health concerns. If you are pregnant or nursing, check with your doctor for the latest guidance. Cioppino (from Italy) 2 large onions, chopped 4 cloves garlic, minced 2 green peppers, or 1 green and 1 red, chopped 2-3 jalapeno peppers, seeded and chopped, to taste 3 stalks celery, chopped 2 cups bouillon or dry red wine, or some of each 1 28-ounce can Italian plum tomatoes, undrained, broken up 1 6-ounce can tomato paste 1 tablespoon Italian spice blend or oregano 3 small zucchini, halved lengthwise, then cut in 1/4" slices 3 pounds (total) seafood -- your choice: shrimp, squid, any firm white fish cut in 1" chunks, clams, mussels, scallops, etc. 1/2 cup chopped flat parsley freshly ground black pepper, to taste cooked whole grains of your choice (optional) Combine the onions, garlic, peppers, celery and bouillon or wine in a large pot. Bring to a boil, reduce the heat and simmer, covered, 10-15 minutes. Stir in the tomatoes, tomato paste and spice blend and cook 10 minutes more. Add the zucchini. Return the liquid to a boil and add the seafood. Cover the pot, reduce the heat and cook, stirring once or twice, until the seafood is done (5-10 minutes.) Add the parsley and black pepper; serve over whole grains if desired. 8-10 servings Kejenou (from Africa) 1 large onion, chopped 2 green peppers, chopped 1 cup bouillon + 1 extra teaspoon bouillon granules 8 parsnips, sliced 1 28 oz. can Italian style (plum) tomatoes 1/2 teaspoon cayenne pepper, or to taste 1 teaspoon ground ginger 1/2 teaspoon cinnamon 1/2 pound fresh green beans, sliced, or 1 cup frozen green beans 1 pound firm white fish fillet of your choice, cut in chunks Cooked whole grains (optional) Cook the onion and green peppers in the bouillon for 5 minutes to softern. Add the parsnips, tomatoes and spices and cook 10-15 minutes or until the parsnips are just tender. Add the green beans and simmer 5 minutes; add the fish chunks and simmer 5 minutes more, or until the fish is firm and no longer translucent, and the green beans are crisp-tender. Serve over whole grains. 4-6 servings Paella (from Spain) 1 large onion, chopped 3 stalks celery, chopped 3 garlic cloves, minced 1/2 cup bouillon 2 teaspoons oregano pinch cayenne, to taste 4 cups cooked barley, brown rice or other whole grains of your choice 1 28-ounce can Italian plum tomatoes, undrained, broken up 1 red bell pepper, cut in 1/2" chunks 1 pound asparagus, cut in 1-2" pieces (reserve the tips) 1 6-ounce jar artichoke hearts, drained 2-3 pounds cleaned mixed seafood of your choice (peeled shrimp, scallops, lobster tails, mussels, clams, 1" chunks of any fish) Cook the onion, celery and garlic in the bouillon to soften, 5-10 minutes. Add the remaining ingredients except the asparagus tips; bring to a boil, reduce the heat and simmer, covered, 10-15 minutes or until the asparagus are tender. Stir in the asparagus tips, artichokes and seafood, cover and cook about 5 minutes more, or until the seafood is opaque and any shells are opened. 6-8 servings Louisiana Oysters and Shrimp 4 cups water 2 bay leaves 1 pound shrimp 1 onion, chopped 5 cloves garlic, minced 1 green pepper, chopped 2 stalks celery, chopped 1 28-ounce can plum tomatoes, chopped 1/2 cup chopped Italian parsley 1 teaspoon hot pepper sauce, or to taste 2 teaspoon fresh thyme, or 1/2 teaspoon dried 1 teaspoon fennel seeds 3 cups okra or green beans, cut in bite-size pieces (fresh or frozen) 1 pint shucked oysters and their liquid Freshly ground black pepper Cooked brown rice or barley Bring the water and bay leaf to a boil in a pot, add half of the shrimp and cook just until they turn pink, about 2 minutes. Remove them with a slotted spoon and put them in a colander. Bring the liquid back to a boil and cook the other half of the shrimp the same way. Run cold water over the shrimp, drain and set them aside. Strain the cooking liquid and return 1 cup of it to the pot. Bring the liquid to a boil, add the chopped onion, garlic, green pepper and celery, and simmer 5-10 minutes or until they are tender. Add the tomatoes, parsley, hot sauce, thyme and fennel to the pot and simmer for 20 minutes, stirring occasionally. Add the okra or beans and simmer 5 minutes. Meanwhile, peel the shrimp. Baby Sign Language - Communication Before Speech By Christine Albury Prior to mastering the art of speech, your baby has great difficulty in communicating his needs to you. This can cause frustration for you both -- yet there is a solution. Baby sign language is rapidly becoming popular as a means of recognising -- and responding to -- a young baby's needs. Babies can be taught sign language from any age, but they really begin to take notice of the signs from around six months and may begin using them from as early as seven to eight months of age. As many parents will testify, babies understand an awful lot more than they are able to communicate through speech at this stage. Some parents fear that using baby sign language may hamper their child's speech development later on. Research into this subject, however, shows that children taught baby sign in infancy go on to develop superb language skills. In some cases, they may learn to speak earlier and often have an increased ability to learn a second language. There are other benefits to introducing baby sign language - studies indicate that children who sign often develop a higher than average IQ. The major advantage for parents, of course, is to be able to identify their babies' needs and respond appropriately -- easing the frustrations that can lead to tantrums. Once this channel of communication is open, many parents feel that a deeper bond with their child is formed, creating a great sense of harmony. There are various methods by which you can learn to sign with your child -- no prior knowledge is needed, so learning along with your baby is part of the fun! Also, try to familiarise anyone who cares for your child with the signs they are using. Some people like to invent their own signs to use with their babies, whereas others prefer to use conventional signs based on formal sign language -- the advantage of using these is that they are recognised by a wide group of people.
